Veggie Sandwich

2 Slice Ezekiel Bread
1 Fresh Spinach
1 carrot
1/2 avocado
1/2 tomato
1/2 Cucumber
2 Mushrooms
2 Tablespoon Hummus
2 Tablespoon Pesto
1 Pinch Redmond salt
1 Pinch black pepper


1. Toast your bread and spread hummus on one side and pesto on the other.
2. Then the fun begins, adding all the veggies; spinach, carrot, avocado slices, tomato slices, cucumber slices, mushrooms, etc. You can really add any veggies of your choice here. Be creative!
3. Sprinkle with some salt and pepper if you desire.
4. You can also add a slice of cheese, some organic lunch meat, your own meat from a roast or some chicken thinly sliced, or boiled eggs. There are so many different ways you can make this sandwich.
5. Slice in half and enjoy.
