2 Cup Quinoa
1/4 Cup Coconut Oil
2 Cup Whole Wheat Flour
1/2 Cup honey
1 1/2 Teaspoon baking powder
1 Teaspoon salt
1/3 Cup Raisins
3/4 Cup Whole Milk
1 egg
1 Teaspoon vanilla extract


1. Pre-heat oven to 350.
2. Combine coconut oil, honey, milk, egg, and vanilla in a large bowl.
3. In a separate bowl combine flour, baking powder and salt. Stir dry mixture into wet mixture and combine well.
4. Stir in quinoa and raisins and divide amongst 12 muffins tins that have been greased with coconut oil.
5. Cook for 25-30 minutes.
