Creamy Carrot Soup

Ingredients:
2 Tablespoon butter
1 Tablespoon olive oil
1 yellow onion
4 garlic
2 Pound carrot
4 Cup Low Sodium Chicken Stock
1/2 Cup heavy cream
2 Teaspoon Thyme, dried
2 Teaspoon salt
1 Teaspoon black pepper
Directions:
Put butter and olive oil in a medium size cooking pot, heat on medium heat until butter is melted and is hot. Add onion and garlic. Saute for 4 minutes. Add chopped carrots, salt, pepper and thyme, saute for another 4 minutes.
Add stock and bring to a boil. Reduce heat and simmer for 30 minutes.
Blend with a blender or a hand blender and then add the cream. Taste to see if you need anymore salt or pepper, otherwise it is ready to serve!
