Creamy Broccoli Soup

2 Tablespoon butter
1 Tablespoon olive oil
1 yellow onion
1 Pound Fresh Broccoli
1 carrot
4 Cup Low Sodium Chicken Stock
2 Tablespoon flour
1/2 Cup heavy cream
2 Teaspoon salt
1 Teaspoon black pepper


Put butter and olive oil in a medium size cooking pot, heat on medium heat until butter is melted and is hot. Add onion, broccoli, carrot, salt and pepper, saute for 5 minutes. Add flour and stir for 1 minute, add stock and bring to a boil.
Simmer for 15 minutes with the cover off. Add heavy cream and blend with a blender or a hand blender. Taste to see if you need anymore salt or pepper, otherwise it is ready to serve!
