Cream Tomato Soup

Number of Servings: 4

2 Tablespoon butter
1 Tablespoon olive oil
1 red onion
4 garlic
2 carrot
3 Cup Low Sodium Chicken Stock
4 1/2 Pound tomato
3 Tablespoon tomato paste
1/3 Cup Fresh Basil
3/4 Cup heavy cream
2 Teaspoon salt
1 Teaspoon black pepper


Put butter and olive oil in a medium size cooking pot, heat on medium heat until butter is melted and is hot. Add onion, carrots and garlic. Saute for 4 minutes. Add tomatoes, tomato paste, basil, salt and pepper, saute for another 4 minutes.
Add stock and bring to a boil. Reduce heat and simmer for 30 minutes.
Blend with a blender or a hand blender and then add the cream. Taste to see if you need anymore salt or pepper, otherwise it is ready to serve!
