Couscous Salad

1/4 Cup olive oil
2 Teaspoon White Wine Vinegar
2 Teaspoon Curry Powder
1/2 Teaspoon Ground Turmeric
2 Teaspoon salt
1 Teaspoon black pepper
2 Cup Whole Wheat Couscous
2 Cup Boiling Water
3/4 Cup carrot
1/2 Cup parsley
1/2 red onion
4 Scallions


Combine olive oil, white wine vinegar, curry powder, ground turmeric, salt and pepper in a bowl and whisk to blend.
Heat water up to a boil and pour over couscous in a bowl. Wrap with plastic wrap and let it sit for 5 minutes. Fluff with a fork.
Add carrots, parsley, red onion and scallions in the bowl that the couscous is in. Pour dressing over everything and stir. Add more salt and pepper if needed.
