Oatmeal Protein Pancakes

Ingredients:
8 egg
1 Cup Cottage cheese
1 Vanilla Protein Powder
1 Cup Oats
1 Teaspoon cinnamon
1/2 Teaspoon vanilla extract
1 Teaspoon baking powder
1/4 Cup Dried Fruit
1 Pinch salt
Directions:
1. Place all ingredients except dried fruit and beaten eggs in a food processor and pulse or blend for until mixture is uniform
2. Pour blended ingredients into a bowl and add the beaten eggs. Fold in dried fruit until just blended
3. Prepare a griddle or pan with coconut oil in it. Ladle pancake mixture onto griddle or pan and cook until both sides are brown, 2 -3 minutes per side.
Have as a Breakfast or as an easy snack!
