Gazpacho Soup

Ingredients:
4 garlic
1 Tablespoon Dried Oregano
2 Tablespoon Flat Leaf Parsley
5 Tablespoon red wine vinegar
5 Tablespoon olive oil
2 Peppers
1 red onion
1 Cucumber
5 tomato
1/2 Cup Katamala Olives
1 Tomato Juice
5 Teaspoon salt
2 Teaspoon black pepper
1 Feta Cheese
Directions:
Put garlic, oregano, and parsley into a food processor and process until chopped up. Add vinegar and olive oil. Process until everything is combined. Place in a large mixing bowl.
Place peppers, red onion, cucumber, tomatoes and olives in the food processor and process until chopped. Place in large mixing bowl along with the olive oil mixture. Stir in tomato juice, salt and pepper and taste. Add any salt or pepper you feel it may need. Cover and let sit for a few hours before serving. When ready to serve, put feta cheese on top! Yum!
