Curried Lentils with Cauliflower and Spinach

2 Tablespoon olive oil
2 shallot
2 Teaspoon ginger
3 Teaspoon Curry Powder
2 Teaspoon Ground Turmeric
2 Cup Lentils
3 Cup Vegetable Stock
1 Cup Coconut Milk
4 Cup Fresh Spinach
1 Cauliflower
1 Teaspoon salt
1 cilantro


1. Over medium heat olive oil In a large saucepan. Add shallots, ginger, curry powder and turmeric. Stir and cook for about a minute.
2. Add the lentils, broth, coconut milk, salt and bring to a boil. Once boiling, add cauliflower and reduce heat to medium low and cook for 10 minutes or until lentils and cauliflower are tender.
3. Stir in spinach and let them cook down for a few minutes. Once cooked down, serve with chopped cilantro on top.
